Apple Pecan Snack Balls and Take a Walk to Help Your Friends…

Hi everyone. I just got back from a really inspiring fundraiser walk for Multiple Sclerosis. It was a great way to combine supporting our friend Joel (in the video below), memorialize my husband’s mom, get some great exercise on a beautiful day and participate in community building behavior with our kids who did great on the 4 mile trek.

I wish I had had the forethought to pack the nutritious snacks printed below that I learned how to prepare from Steven Greenberger and nutritionist, Dina Aronson’s snack workshop last week. If you take just a little time to make a big batch, you can store these for the future-like a squirrel- and not give in to the bad carb-filled snacks we all tend to fall victim to when we are in a rush. These taste really great and are so virtuous that, I dare say, you can even throw some chocolate chips in. Enjoy!

Steven’s Apple Pecan Balls:

6 oz. dates
6 oz. dried apples
4 oz. toasted or raw pecans
2 tsp cinnamon
1 TBS maple syrup
1 TBS ground flax seed

Place all ingredients in a food processor. Pulse until the mixture resembles a paste. Shape into 1-inch balls. Makes about 24 balls. Can store in the fridge or freezer for later use.
