Sauteed Kale with Cashews and Raisins and It’s FAST!


Hi everyone! For a lot of folks, healthy eating is perceived as expensive and time consuming. Here is a dish that is neither. I suggest buying a big bunch of kale, taking the fibrous stem out, chopping up the leaves, and leaving them in a big bag in the fridge for easy access. When you are ready to cook, use a strainer or better yet, a salad spinner to wash and dry.

Kale with Cashews and Raisins:

3 cups chopped, washed kale
1/2 tsp olive oil
1 tsp honey
1 TBS cashews, one TBS golden raisins.

Saute the washed and dried kale in the olive oil, add the honey, stir. Serve and top with the cashews and raisins. Salt to taste.

  1. Mmm…I’ve made this with pine nuts and without honey. The boys eat it as long as there are raisins! Thanks for the kale storage tip, too!
